2 teaspoons country style mustard
2 tablespoons mayonnaise
2 tablespoons olive oil
8 thick slices brioche, challah or white bread
4 ounces EACH grated Jarlsberg® and Old Amsterdam cheese
Mix mustard with mayonnaise. Brush olive oil on one side of each bread slice. With oil side down on a clean surface, spread mustard/mayo evenly between 4 slices. Divide cheese evenly between 4 slices. Top with remaining slices of bread, oil side out.
Heat skillet (or flat grill) on medium high. Place sandwiches in skillet and cook until bread becomes golden brown and cheese begins to melt. With spatula, carefully turn over and press down lightly on sandwich. Cook until cheese completely melts. Serve immediately with soup or salad. Serves 4.
Variation: Divide one medium onion, cut in thin slices and lightly sautéed, and 4 slices cooked Canadian bacon between 4 slices. Top with remaining bread slices. Cook as directed above.
