Recipes - Old Amsterdam cheese nests

Delicious Old Amsterdam cheese nests with strips of turkey breast.

Ingredients 4 persons:

  • 350 g of Old Amsterdam
  • Baking paper
  • 400 g of turkey breast
  • 1 lettuce
  • 1 cucumber
  • 1 orange sweet pepper
  • 250 g of cherry tomatoes
  • 100 g of yoghurt
  • 1 tablespoon of Dijon mustard
  • 1-2 tablespoons of balsamic vinegar
  • Salt and pepper
  • A pinch of sugar
  • 2 tablespoons of olive oil
  • ½ a clove of garlic

 

Preparation

Preheat the oven to 250°C. Grate the Old Amsterdam and keep two tablespoons to the side. Sprinkle the rest of the cheese in 4 thin round slices on a baking tray covered in baking paper, and let it melt in the oven until the cheese sticks together. Let the cheese biscuits cool down for a couple of minutes, put each slice on the bottom of a small upturned bowl, press lightly so that it takes on the shape of the bowl and let it cool down.

Cut the turkey breast into strips and fry until crisp. Wash the lettuce, peel the cucumber and make balls using a melon baller. Clean and wash the sweet pepper and cherry tomatoes. Cut the sweet pepper into small pieces, cut the cherry tomatoes in half and add to the salad. Mix the yoghurt, mustard and vinegar. Season this with salt, pepper and sugar. Stir in the oil. Peel and press the garlic and add it to the above. Put the lettuce in the Old Amsterdam cheese nest, cover this with the strips of turkey breast and sprinkle with the dressing. Sprinkle the remaining bits of cheese over the salad. One cheese nest per plate.
