1 cup diced cooked ham OR cooked ground beef
1 cup shredded Jarlsberg® cheese
1 cup frozen corn kernels, thawed
¼ cup medium or spicy salsa
1 package puff pastry, thawed in refrigerator according to package directions
Preheat oven to 400o.
Mix first 4 ingredients and set aside. Unfold chilled pastry, roll out lightly until each piece is 9x12-inches. Cut each into nine squares (using two vertical cuts, two horizontal cuts).
Place heaping tablespoon of mixture on each pastry square, brush edges with water and pull gently to fold into triangles, pressing edges together with a fork.
Bake 12 – 15 minutes or until puffed and golden (making sure filling doesn’t ooze out of sides). Serve warm or at room temperature. Makes 18 empanadas.
